My go-to meals to cook is pasta and chicken. It's such a simple and easy dish to throw together for quick, delicious, never boring meal!
Here, I've made a creamy mushroom orzo with crispy herby chicken.
Cooking Tips
Cooking Orzo. Taste your orzo to make sure it's cooked to your preference. If it's not fully cooked before the liquid evaporates, add more chicken stock.
Veggies. The smaller you cut your veggies the faster they'll cook.
4 Servings, Approx. 1 hr
What You'll Need
Chicken
4 Chicken Thighs (bone-in or boneless, your preference)
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Italian Seasoning
1 tsp Paprika
1 tsp Tarragon
½ tsp Salt
1 Cup Bread Crumbs
2 Tbsp Olive Oil
Orzo
1 Cup Orzo
1 Tbsp Olive Oil
¼ Onion, diced
2 Garlic Cloves, minced
2½ Cups Chicken Broth
½ Cup Carrots, chopped (or 10-15 baby carrots)
½ Cup White Mushrooms, sliced
½ Cup Baby Potatoes, quartered
½ tsp Salt
1 Cup Heavy Cream
1 Cup White Wine
½ Cup Parmesan
1 Tbsp Tarragon
All You Need To Do
Prepare Chicken. Combine all of the dry ingredients together.
Pat your chickens dry with a paper towel and cover each side with your dry ingredient mixture.
Add the olive oil to a pan at medium heat and sear your chicken golden brown starting with skin side down. Approximately 5-6 minutes both side.
Set aside to prepare the orzo.
Prepare Orzo. In the same pan add 1 Tbsp of olive oil and sauté your onions until they're transparent and wilted. Approximately 2-3 minutes.
Stir in garlic and orzo until everything is coated with oil for approximately 1 minute.
Add wine and stir and deglaze the pan scraping the pan for brown bits at the bottom.
Add chicken broth, mushrooms, carrots and potatoes and cook over medium low heat and let it simmer for about 15 mins or as long as the pasta is cooked to your preference. Stirring often.
Preheat the oven 400° F.
Add in heavy cream, tarragon, parmesan and salt. Combine thoroughly and transfer the mixture to an oven proof baking dish. Spreading the orzo mixture across the bottom evenly.
Place the chicken on top of the orzo mixture.
Cook in the oven for 15-20 minutes or until the chicken is fully cooked at 165° F.
Garnish with parmesan and fresh tarragon. (optional)
