Loading up on Vitamin C is essential during flu season and one of my favorite ways to do it is through dessert.
Hope you love this cake recipe as much as my family did.

What You'll Need
Candied Mandarins
3 Mandarins, sliced ¼"
¾ Cup Sugar
¾ Cup Water
Cake
4 Mandarin Oranges
3 Eggs, room temperature
5 Tbsp Olive Oil
5 Tbsp Yogurt, room temperature
2 tsp Orange Extract
1 Cup Sugar
1¾ All-Purpose Flour
¾ tsp Salt
¾ tsp Nutmeg
1 Tbsp Baking Powder
All You Need To Do
Preheat oven to 350° F.
Prepare Candied Mandarins. Combine your water and sugar in a small saucepan at high heat and bring to a boil. Once the liquid is boiling lower the heat to medium low and add the mandarin slices. Be sure that all slices are covered in the syrup and simmer it for 15-20 mins. Push the slices around occasionally so they soak up the syrup. Remove it from the heat and let it cook down completely before handling.
Prepare Cake. You can make the cake it in a 9-in round pan or two 5-in round pans. Spray with cooking spray.
Zest your oranges and squeeze the juice.
Whip eggs and sugar together until fluffy (approx. 5 mins). Then slowly add the oil, flour, nutmeg, salt, baking powder.
When thoroughly combined, add in your yogurt, orange extract, zest and juice until batter is evenly combined.
Place your orange slices into the bottom of the cake pan (do not discard the syrup), then pour the batter into the pan.
Bake for 50-55 mins or until a toothpick comes out clean.
Allow pan to cool completely before removing the cake.
Once the cake is cooled, remove the cake from the pan and brush on the orange slice syrup.
