Taiwanese Sesame Cold Noodles aka Ma Jiang Mian (麻醬麵) is one of my favorite noodle dishes to eat during the summer time. It's full of flavor, easy to make and refreshing.
This simple dish has a nutty noodle flavor from the sesame sauce that will have you licking your bowl clean. Spice it up with some garlic chili oil for that umami flavor. My favorite chili oil to use is The Spicy Mamas.
Typically, this dish is served with very simple toppings of ground pork, cucumber and scallions. My recipe uses ground chicken for a healthier alternative. Hope you enjoy!

What You'll Need
4 oz. Asian Thin Wheat Noodles like Somen Noodles (2 servings of these somen noodles or you can substitute with thin spaghetti)
1 Kirby Cucumber, julienned
1 Scallion, diced
Toasted Sesame Seeds (optional)
Chopped Peanuts (optional)
Chinese Garlic Chili Sauce (optional)
Chinese Minced Meat
8 oz. Ground Chicken (you can also use ground pork for more flavor)
2 tsp Soy Sauce
2 tsp Light Soy Sauce
2 tsp Shaoxing Wine
½ tsp Sugar
½ tsp garlic, minced
½ tsp ginger, minced
Dash of Sesame Oil
¼ tsp Pepper
¼ Cup Water
2 tsp Vegetable Oil
Sesame Sauce
1 Tbsp Chinese Sesame Paste
2 Tbsp Peanut Butter (I like to use crunchy for texture but you can also use smooth)
2 tsp Hoisin Sauce
1 Tbsp Sesame Oil
2 tsp Black Vinegar
½ tsp Sugar
1 tsp garlic
2 Tbsp hot water
All You Need To Do
Prepare the noodles as instructed. Set aside and let it cool as you prepare the other ingredients. Note (optional): After you drain the noodles, drizzle a little bit of sesame oil and toss, it helps the noodles from sticking and gives it a little added flavor.
Prepare your minced meat. In a medium skillet, heat the vegetable oil on medium high until the oil is hot. Add your chicken, garlic and ginger and brown the meat.
Add the Shoaxing wine and stir fry until the wine has evaporated (takes about 30 secs).
Add the remining meat ingredients and bring the sauce to boil.
Lower the heat to low and let it simmer for about 5-10 mins until the sauce is reduced almost to nothing.
Set aside to cool.
Prepare your sesame sauce. In a medium bowl combine all of your sauce ingredients and mix thoroughly. If you Used crunchy peanut butter it'll be a little lumpy bc of the nuts but if you used smooth your sauce should smooth and creamy.
Prepare your bowl. Divide your noodles into 2 bowls and add 3 tsp of your sesame sauce mixture into each bowl and toss the noodles to evenly mix the sauce in.
Top the bowl off with your minced chicken, cucumbers and scallions.
Optional: Sprinkle on sesame seeds and chopped peanuts. Serve with a side of hot chili oil and additional sesame sauce.
